Arugula Lavash Pizza


  • 1 sheet California Lavash
  • 3 tbsp. tomato sauce
  • ¼ cup Mozzarella cheese, shredded*
  • 2½ tbsp. mushrooms, fresh and sliced (½ oz.)
  • 1¾ tbsp. black olives, sliced (1/9 cup)
  • ½ cup arugula


  1. Preheat oven to 350°F.
  2. Spread a thin layer of tomato sauce over the Lavash sheet.
  3. Sprinkle on light layer of cheese (vegan or optional).
  4. Add the mushrooms and black olives.
  5. Bake for 5-6 minutes.
  6. Add a layer of arugula and serve.
Variation: Make as a panini or a wrap.
*Vegan option: Substitute vegan Mozzarella shreds.
