Tofu Scramble Naan Pizza

Ingredients

  • 2 pieces California Lavash Naan
  • 1 cup spinach
  • Ketchup, drizzled
  • 2 green onions

For Tofu Scramble:

  • Half package firm tofu
  • 1/4 tsp salt
  • 1/2 tsp pepper
  • 1/4 tsp turmeric
  • 1/4 tsp onion powder

For Hash Browns:

  • 2 cups frozen shredded hash browns
  • 1/4 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp onion powder

Directions

  1. In a large skillet, cook your hash browns according to package instructions.
  2. Add all your seasoning while cooking.
  3. Set aside.
  4. In the same skillet, heat up some oil in a pan.
  5. Crumble your tofu directly in and add all of your seasonings.
  6. Cook for 4–5 minutes.
  7. In the meantime, thinly slice your green onion.
  8. Assemble your flatbreads.
  9. Evenly distribute your hash browns, tofu scramble and spinach onto your flatbreads.
  10. Place in your oven on high broil for 2–3 minutes, or until the Naan bread becomes crispy.
  11. Once done, take out and add your avocado, sliced green onion and ketchup drizzle.
  12. Serve immediately.
