Vegan Tomato Zucchini Lavashna

Ingredients

  • 3 sheets Atoria’s Family Bakery Lavash
  • 2 cups tomato sauce
  • 2 1/2 cups shredded zucchini
  • 2 cups mushrooms
  • 1 cup tomatoes, diced
  • 1 1/2 cup spinach
  • 1 cup olives, sliced

Directions

  1. Preheat oven to 450°F.
  2. Place 1 sheet of Lavash on bottom of baking pan.
  3. Spread 1 cup tomato sauce over Lavash.
  4. Layer zucchini, mushrooms, and tomatoes.
  5. Add another sheet of Lavash.
  6. Layer 1 cup tomato sauce, spinach, and olives.
  7. Add a final sheet of Lavash.
  8. Sprinkle 1/2 cup zucchini on top.
  9. Bake for 15-17 minutes.
