Vegan Tomato Zucchini Lavashna

Ingredients
- 3 sheets Atoria’s Family Bakery Lavash
- 2 cups tomato sauce
- 2 1/2 cups shredded zucchini
- 2 cups mushrooms
- 1 cup tomatoes, diced
- 1 1/2 cup spinach
- 1 cup olives, sliced
Directions
- Preheat oven to 450°F.
- Place 1 sheet of Lavash on bottom of baking pan.
- Spread 1 cup tomato sauce over Lavash.
- Layer zucchini, mushrooms, and tomatoes.
- Add another sheet of Lavash.
- Layer 1 cup tomato sauce, spinach, and olives.
- Add a final sheet of Lavash.
- Sprinkle 1/2 cup zucchini on top.
- Bake for 15-17 minutes.
